The coffee cupping is an essential process to identify any defects in coffee and to make sure that the coffee properties are correctly identified to maximise the price it can achieve on the market.
Speciality coffee and coffees with a prized cupping profile can reach much higher prices. Coffee with defects reaches a lower price, often on the national market only.
